This was a really good stir fry that I put together. I picked up a couple of hints. 1) Using the egg yolks and coconut flour as a thickener. It was really a good sauce.2) Marinating the Bok Choy ahead of time3) Making sure to use seasoned/fragrant oils for cookingServe with Cauliflower Rice
This turned into a really nice family dinner that is really simple to make. I really liked the riced cauliflower on the bottom which is used as a base crust, it really adds to the dish. This comes from Wholesomeyum.com at https://www.wholesomeyum.com/low-carb-keto-cheeseburger-casserole-recipe/
My family and I used to love the Melting Pot Fondue experience. Our local restaurant has closed, but I wanted to recreate the full meal experience for the family. An additional challenge is that I wanted to do this within a low-carb or keto friendly diet. So I recreated our favorite flavors and menu items.
The hardest part of doing a Keto friendly Fondue is chocolate. I found this recipe and it is awesome. Couldn’t tell that it was much lower in bad sugar than most chocolate. For dippers I suggest raspberries, blueberries, bananas (limit if on Keto), Brownies (Keto or not), and Keto friendly marshmellows.
