Thai Chicken Curry

This makes a great easy quick dinner and serves nicely with white, brown or cauliflower rice.

Thai Chicken Curry

Ingredients

  • 1-2 tbsp olive oil
  • 1-1.5 lbs Cubed Chicken Bite size from tenders or breasts
  • 1 onion chopped into bite size pieces
  • 2 tbsp Panang Curry Paste Aroy-D or Mayploy and they are different
  • 2 broccoli crowns chopped to bite size
  • 1 can coconut milk
  • salt and pepper to taste

Instructions

  1. Put Olive oil in a pan and heat to medium

  2. Season chicken with salt and pepper

  3. Saute Onions for 1-2 minutes

  4. Add the chicken and continue to cook until mostly cooked through

  5. Add Curry Paste and stir 1 minute

  6. Add Coconut Milk and simmer

  7. Add Broccoli until tender
