Broccoli Cups – Simple Healthy Appetizer
So I needed something quick for a dinner party I was going to but I wanted something really healthy and guilt free. I stumbled upon a couple of different versions of this recipe and created my own that came out totally awesome.
Broccoli Cups - Simple Healthy Appetizer
- 2 packages frozen chopped broccoi Fresh chopped will work as well, About 4 cups.
- 2 TBSP garlic salt
- 1 cup Panko Bread Crumbs Could use Quinoa as a even healthier replacement
- 2 cups Grated Cheddar Cheese
- 1 Egg
Steam Broccoli in either Microwave or Steamer. Cool.
In a glass bowl, mix broccoli, egg, breadcrumbs, and cheese with you hands until well mixed.
Season with 2 pinches of sale and 2 pinches of pepper. Slowly add garlic salt until the mixture has a nice spiced taste.
Grease a cupcake pan and fill cupcake cups with mixture
Bake at 375 for 20 minutes. Let cook in pan for 10 minutes, take out and serve warm.
