This makes a great easy quick dinner and serves nicely with white, brown or cauliflower rice.
Thai Chicken Curry
Ingredients
- 1-2 tbsp olive oil
- 1-1.5 lbs Cubed Chicken Bite size from tenders or breasts
- 1 onion chopped into bite size pieces
- 2 tbsp Panang Curry Paste Aroy-D or Mayploy and they are different
- 2 broccoli crowns chopped to bite size
- 1 can coconut milk
- salt and pepper to taste
Instructions

Put Olive oil in a pan and heat to medium

Season chicken with salt and pepper

Saute Onions for 1-2 minutes

Add the chicken and continue to cook until mostly cooked through

Add Curry Paste and stir 1 minute

Add Coconut Milk and simmer

Add Broccoli until tender
