Crepes – With bananas and other fruit
For a quick fancy decant desert, crepes always fit the bill.
Crepes with Banana Filling
Crepe recipe with options for fruit or other fillings
- 2 eggs large or bigger
- 1 cup whole milk low fat can work
- 1/3 cup water
- 1 cup all-purpose flour
- 2 Tbsp granulated sugar
- 1/4 Tsp Kosher Salt
- 6 Tbsp unsalted butter melted and divided
- 1 Tbsp light brown sugar
- bananas, strawberries, chocolate, etc.
Place eggs, milk, water, flour, sugar, salt and 2 Tbsp of butter in a blender. Blend to a smooth batter with consistency of heavy cream. If too think add water slowly. Cover and refrigerate 30 min.
Preheat a high quality non stick pan until water sizzles. brush surface with butter
place 1/4 cup of batter into the middle of the pan, swirling quickly in all directions until you have a thin even coating across the pan. Cook 60-90 seconds and then flip and cook another 60-90 seconds
Serve immediately or put on parchment paper and in warm oven to serve as a group
