This is a pasta sauce that I got from my mother in law. It works over Penne, over homemade ravioli (especially Lobster Ravioli) and really any kind of pasta.

Vodka Sauce
Cook Time 20 minutes
Total Time 20 minutes
Ingredients
- 2 Shallots Chopped
- 2 Tbsp Butter
- 1/3 Cup Vodka
- 1/2 tsp Red Pepper Flakes
- 1 Can Whole or crushed tomatoes Crushed works better
- 1/2 cup heavy cream
- 1/4 cup fresh grated parmesan
Instructions

Heat Butter in Skillet

Add Chopped Shallots and cook until clear

Add Vodka and Red Pepper flakes heat for 2 minutes

Add crushed tomatoes - cook over high heat (just shy of boiling) for 20 minutes. Stir to break up tomatoes and keep from burning

Add heavy cream and keep stirring

Cover and cook another 5-10 minutes until thick

Add Cheese and serve over pasta.
