This is a southwest style Salsa especially good with fresh peaches and corn. I have taken out the Jalapeno peppers.
Peach Corn Salsa
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes
- 2-3 peaches cubed
- 2-3 cobs corn Remove the corn from the cob
- 1 medium red onion diced
- pinch salt
- pinch pepper
- pinch Parsley
- 2 tsp butter
Heat a thick bottom pan, iron clad if you have it. Melt Butter.
Over Medium-High Heat, soften Red Onion - 1-2 min
Add cord and season with salt and pepper until onion is soft and corn is just starting to char
put cubed peaches (peel on) in the bottom of a serving bowl. Place finished corn/onion on top. Mix to heat peaches, add parsley and season to taste.
