Peach Corn Salsa

This is a southwest style Salsa especially good with fresh peaches and corn.  I have taken out the Jalapeno peppers.

Peach Corn Salsa

  • 2-3 peaches cubed
  • 2-3 cobs corn Remove the corn from the cob
  • 1 medium red onion diced
  • pinch salt
  • pinch pepper
  • pinch Parsley
  • 2 tsp butter


  1. Heat a thick bottom pan, iron clad if you have it. Melt Butter.
  2. Over Medium-High Heat, soften Red Onion - 1-2 min
  3. Add cord and season with salt and pepper until onion is soft and corn is just starting to char
  4. put cubed peaches (peel on) in the bottom of a serving bowl. Place finished corn/onion on top. Mix to heat peaches, add parsley and season to taste.
