As I have focused more on Keto recipes. I have remade on of my others recipes. Traditional peppers are stuffed with lots of tomato sauce and rice. By removing the rice, I also found I had to lighten the dish by moving from beef to ground Turkey.
Keto Turkey Stuffed Peppers
Full meal stuffed pepper that is light and filling
Ingredients
- 4 stuffing peppers any color works but the brighter the sweeter. Look for peppers with 4 points. They stand in the pan better.
- 1 lb ground turkey
- 1 lb Fresh small mozzarella balls
- 1 sweet or yellow onion
- 1 tbsp garlic powder
- salt and pepper to taste
- 1 cup shredded mozzarella
- 6 Oz canned tomatoe sauce (small can)
- 2 tbsp olive oil
Instructions

Slice the onion into small pieces and sauté in a frying pan until soft and transparent. Season with some of the garlic and salt and pepper. Put aside in a bowl.

Brown ground turkey in a pan with garlic and salt/pepper to taste.

Remove from pan and mix with onion and mozzarella balls.

Put a layer of olive oil on the bottom of the pan and sprinkle some garlic powder into it

Slice open the top of the peppers and remove the seeds. Now roll each of the peppers in the oil to coat the outside

Stuff each of the peppers with the filling.

Too each pepper with two spoonfuls of the tomatoe sauce

Bake for 20-25 min at 375.

When the peppers start to soften add shredded mozzarella to the top and melt.

Serve immediately
