A cross between and Apple Pie and a Apple Cobbler, as made by my grandmother
Core, Peel and then chop the apples to 1in x 1in squares
Put Apples in a Pot
Add Apple Cider and Lemon Juice
Heat, stirring occasionally until cider boils then turn down. Let the Apples cook a little until they soften slightly but don't brown
Take off heat, add sugar and stir while they cool
Into a bowl, add Flour, Baking Powder, Salt, 1/2 cup sugar
Grade the outside of the lemon into the bowl, juice the rest of the lemon
Grate the Frozen butter or small cold butter cubes and add them to the dough (cold butter is important here)
In another bowl, mix eggs, 2 Tsp Lemon Juice (from lemon) and mix
Now add liquids to the dry ingredients and mix. The dough will slowly come together.
Knead dough until it forms a smooth ball.
Preheat Oven to 350 degrees.
Divide the dough into 1/3 and 2/3rds. Roll the 2/3 piece out into a smooth flat shape the size of the pan. Take your pan and grease it and then put the dough into the pan.
Now add the cool apples into the pan
Take the 1/3rd portion of dough, roll out and cut strips and create the weave for the top.
Sprinkle with sugar on top
Bake for an hour until crust is golden brown
