Homemade Strawberry Syrup

Its been a while since I posted anything new since we were on vacation.  While we on vacation we found a bartender who made us the most amazing Strawberry martini topped with Champagne.  More on that in a different post, but one of the core ingredients for the drink was strawberry syrup.  Trying to find strawberry syrup for a bar is tough.  Most liquor stores don’t seem to sell it.

I tried Amazon and the best I could find was here.  And that just seemed too expensive.  So I found a recipe from Tori Avry (http://toriavey.com/toris-kitchen/2013/05/strawberry-simple-syrup/) that I really liked.  I changed it just slightly with some lemon juice to bring down the sweetness a little bit for bar usage.

Ingredients

  • 2 Pounds Strawberries
  • 1 Quart (4 cups) Water
  • 2 Cups Sugar
  • 1/2 tspn Lemon Juice

Tools

  • 1 Fine Mesh Strainer
  • 2 Saucepans

Instructions

  1. Rinse the Berries, clean them and hull them.
  2. Chop them into about 6 pieces per strawberry. You want them all the same size if possible.
  3. Place in saucepan and cover with water. Bring to a boil. Then simmer for 20 minutes
  4. Skim off any foam that rises to the top.
  5. After 20 minutes, berries will have lost their color. Remove from heat. Strain the mixture into a 2nd sauce pan. Removing the solids.
  6. Add the sugar. Bring back to a boil to make sure sugar fully dissolves.
  7. Add Lemon juice and store in a glass bottle.

Recipe Notes

You can thicken by reducing farther for pancakes that the like.
